Our Farm
Promised Land Farm, owned by Tom & Mary Salva, is a grass-fed livestock farm located in Westport NY, nestled in the Adirondack Park on the shores of Lake Champlain, surrounded to the west by the High Peaks of the Adirondack Mountains, and enhanced by a panoramic view of the Green Mountains of Vermont. The entire farm is a perpetual conservation preserve administered by the Adirondack Land Trust.
Our cows are USDA certified grass-fed, feasting on a steady diet of diverse perennial forage in pastures certified organic by NOFA-NY since 2005. Pastures are managed in accordance with rotational, intensive, and regenerative principles that enhance soil health, stimulate quality regrowth of pastures, and maximize carbon sequestration in the soil. Water is sourced from a pure spring located in the nearby foothills of the Adirondacks.
Our herd of 100 cattle consists primarily of Milking Devons, a hardy, rugged, multipurpose heritage breed brought from England by the Pilgrims in the early 1600s, which later, in the 1800s, wore bare the Oregon Trail, moving America to the western frontier. The herd also includes Hereford cows, providing hybrid vigor and complimentary qualities to our beef. Our cows are bred to a Milking Devon bull with pedigree lineage and superior A2A2 genetics.
Our Story
Promised Land Farm is owned by Thomas & Mary-Carmen Salva. While raising their family of seven children over their 40+ years of marriage, they toiled to bring to fruition a dream that brought their grandparents to this ‘promised land’ of opportunity, a land flowing with milk and honey, and much more! The agrarian spirit instilled in them by their families, and further inspired by the robust and thriving Amish farming community, led them to invest their lives in a farm and manage that gift of good land to the honor and glory of the Creator of heaven and earth, the Almighty God.
After 15 years of searching and saving, Tom & Mary acquired this farm in 2010. Though they have yet to relocate to the farm permanently, due to various family commitments and responsibilities, their vision of a family farm continues to simmer on the back burner. Their farm is currently operated by Joseph Beiler, whose passion for farming is exceeded only by his devotion, dedication, and diligent effort, without which none of this would have been possible. Joseph came to the farm in 2017 with a shared vision for a sustainable farming venture that would provide a diversity of quality food products for the community. At that time, Tom & Mary began investing in livestock and machinery needed to support a grass-fed beef operation and worked off-farm to provide the necessary resources, while Joseph managed the daily operation of the farm. Calves born on the farm finally developed to maturity in 2022, and the harvest began! Though Tom & Mary plan to become more actively involved in the farm operation in the near future, they currently are preoccupied with managing beef sales and developing new markets for their beef.
Our deepest desire is to provide the best beef at an affordable price. So we offer bulk discounts to families with plenty of mouths to feed, as well as those who manage community food cooperatives. We are dedicated to your complete satisfaction, in hope that many of you will return for more!
